Taste authentic Belgian waffles in their homeland, where they come in two distinct styles – Brussels waffles are light and rectangular with deep pockets, while Liège waffles are dense, round, and caramelized with pearl sugar. Forget the tourist versions loaded with toppings; locals eat them plain or with just a dusting of powdered sugar, letting the waffle's buttery richness shine through.

“A beautiful Liege waffle topped with strawberries, bananas, whipped cream and chocolate sauce in a small tray was handed over to me. The only downside from purchasing from a storefront in an alleyway, there was really no place to sit down and enjoy the waffle. You just kind of have to stand there on the sidewalk trying to balance the waffle in your hand while you enjoy it and hope you don’t topple the whole thing over. But let me tell you, it was well worth it. The Liege waffle was crispy and sweet and had little pockets of crystalized sugar as you dug into it. The strawberries and bananas were fresh and sweet and added depth and volume and flavor to the waffle. And of course you’ve got the luscious homemade whipped cream and the ultra-sweet chocolate sauce. I don’t know if was a dessert or just a midday snack, but either way, it was decadence. My husband and I stood there in the middle of an alleyway in Brussels and devoured our delicious waffle.”
“Like most people, I spent all nights in Brussels so I had several chances to visit Maison Dandoy. First, I tried Liege Waffle. It was my first Belgian Waffle in Belgium and it was pretty good. However, I personally found Liege Waffles in general to be too heavy and too dense for me. I found out that Liege Waffle I had in Brugge the day after was much better than Maison Dandoy’s.”
“Then, I went back again to Maison Dandoy and order Brussels waffle this time. I think the batter is rather bland but a bit more “savory” than other places I tried (tastes almost like corn dog batter). But the waffle has a very nice texture. Crispy and light… Still, it is not as good as the one I had in Ghent. But if you are stuck in Brussels, definitely get Brussels style waffles here (better than the Liege one I think).”
