โFour hours of back and forth with a recipe book, googling and searching for videos on YouTube (and lots of tea and biscuits!) and I had my first cheese. I remember it well, it was a Scottish Crowdie with black pepper. Crumbly, creamy with a peppery kick! Yum. After that, I was hooked [...] I have always found making cheese very therapeutic, there's something about cutting the curds that allows you to be fully in the moment and escape somewhat. Then there's the fact that at the end of your all hard work you get to try the cheese that you made - we loved trying the different cheeses. Not all of the cheese I made were a success, there was a lot of perfecting, but I had lots of fun along the way.โ
โFast forward to February 2009 which was a momentous month. It was the month that I made my very first cheese. Well, from the day that I first tasted those Greek dairy products, I had always wondered how they made cheese at home. Most cheeses I knew about were made under hygienic conditions in a factory. Now was my chance. Our local community centre was hosting a cheese making course, and to cut a long story short, I thoroughly enjoyed the five-hour course. I made some Feta and then purchased a cheese making kit afterwards so that I could make my very own cheese at home. Finally, my wish came true and I created a delicious feta like the one I remembered all those years ago.โ
