βEvery week I buy a new cheese to try. I have a little taste, often it's a bit too funky for me, so I put it back in the fridge and the next day I have another little taste. After a few days, if I still don't like it, I don't force myself to eat it. I've tried it and I tick it off my mental list, and I might come back to it at a later date. Sometimes I actually start to really like it. I can be a bit weird about mold and funky tastes; until a couple of years ago I wouldn't eat the rind on brie and would only eat camembert if it was baked. I've since tried some really lovely cheeses that would have previously scared me.β
