βI haven't been eating any meat or dairy this week, but I hadn't been able to make it to the grocery store yet to actually get supplies for "official" vegan meals until today. I made myself this tonight: https://switch4good.org/colorful-fiesta-salad-bowl/ it was a little more involved than I initially thought, but it was pretty good. I think I went too light on the chili powder though. And next time I might do it without the sweet potatoes. I knew they weren't my favorite, but I thought I'd give them a try again anyway.β
βThe foods that were able to get me through the experience the most were substitution products and meals/snacks that werenβt made intentionally vegan. After day two, everyday at school I would buy an Uncrustable peanut butter and grape jelly sandwich for lunch. For me the PB&J fits under the description of foods that I never would have given a thought as to whether or not they were vegan, like Oreos. Most importantly, I found the sandwich to be filling, especially if I also had some fruits on the side. But there was no fear when it came to eating an Uncrustable because I knew (relatively) what to expect. However, eating fake burgers, chicken nuggets, and Philly cheesesteaks is a whole other ballpark. To my surprise, all of the substitute foods I ate were really good! None of it ever tasted like the meal it was mimicking, but it gave me the experience of eating my favorite foods while still being pretty tasty.β
