I had cafe beignet yesterday also and it was terrible. I’m positive one of them were under cooked. There were no pockets of air and very doughy. I ate another and it was slightly better and took a bite of the third and stopped. I’ll stick with the tried and true cafe du monde going forward. I was at the canal st location.
