Gluten-free baking requires understanding how different flours behave and often combining several types for the right texture. Almond flour, rice flour, and xanthan gum become your new best friends. The results can be surprisingly delicious and open up desserts for friends with gluten sensitivities.

βI spent some time looking up gluten free baking tips then just kind of went for it. I made a few changes to the recipe, let the batter rest, then popped it in the oven and hoped for the best. I was a bit worried about the texture since itβs supposed to form a crust but the inside is like a lava cake. But it turned out to be a success! The texture is right and most importantly tastes good (and is parent approved). Iβm just really excited that it worked and gives me hope for more gluten free baking πβ
