βThis dish was of a big surprise for me. In a good way. Iβve had several wine sauce based French dishes including boeuf bourguignon, whose flavor I would describe as thick and concentrated. On the other hand, this sauce with egg was much smoother. Iβm pretty sure the secret to this sauce is the butter in addition to the fat released from the lardo cubes. I could easily finish the last drop of it with extra pieces of bread served for the table.β
