Authentic Beijing Peking duck is a theatrical dining experience where crispy-skinned duck is carved tableside and eaten with paper-thin pancakes, scallions, and hoisin sauce. The birds are roasted in special ovens that create impossibly crispy skin while keeping the meat tender. This imperial dish requires advance reservations at renowned restaurants like Quanjude, where the technique has been perfected over centuries.

β€œOur duck was brought to the table side and being carved skillfully right before our very eyes. [...] Finally after waiting for what seemed like ages, the duck was served. Da Dong’s claim to fame is their leaner, less oily duck and crisp thin skin. I must say the skin was really thin and crisp with not an iota of fat. One only needs to dip the skin in sugar and its absolutely delicious. [...] Though the duck meat was lean, it was still succulent and tasty.”

β€œWe were offered small pancakes a bit like mini tortillas which were used to wrap the duck pieces and selected condiments in. It was delicious and so decadent. [...] My individual tray has some duck meat and skin, accompanied by fresh vegetable strips, crushed garlic, condiments and the special sauce. The pancakes in the little wooden tub top left and some crisp bread puffs are used to hold it all together. Nothing is wasted in China and behind the bread basket, a special plate is provided for some select pieces of meat.”
